Cinnamon Roasted Sweet Potato Chips

Sweet potato is one of my favourite foods. Full of fibre and manganese, these components in addition to cinnamon, further assist in the carbohydrate metabolism, and therefore healthy blood sugar levels, satiety and hormonal control. Sweet potato is also packed full of vitamins and antioxidants, making it a fine example of nutrient density and one of nature’s best carbohydrate sources.

These Cinnamon Roasted Sweet Potato Chips are a fantastic side dish with your choice of protein and greens. Serve with my Sugar Free Tomato Sauce and you’ll never need deep fried chips again. Enjoy.

Ingredients

  • 1 medium sweet potato
  • 2 tablespoons cold pressed extra virgin coconut oil, melted
  • 1-2 teaspoons cinnamon
  • Sea salt, to taste
  • Fresh rosemary, to taste

Method

  1. Preheat oven to 180°C.
  2. Slice sweet potato into thin chip-like pieces.
  3. Sprinkle with oil, cinnamon, salt and rosemary and bake for 20 minutes.
  4. For extra crunch, finish off under the grill until crispy.
