New Recipe: Clean Anzac Biscuits

Anzac Biscuits are an Australian classic and have long been associated with Anzac Day. Traditionally made using rolled oats and butter, we’ve created a gluten and dairy free version which we are sure you will love. 

Anzac Day marks the anniversary of the first major military action fought by Australian and New Zealand Army Corps during the First World War. Today, on April 25th we remember the lives of all Australians killed in military operations.

Ingredients (Makes 10-12 biscuits)

  • 1 cup almond meal
  • 1 cup desiccated coconut
  • ½ cup of your favourite nuts (we used a mixture of almonds + macadamias), finely chopped
  • ½ teaspoon sea salt
  • ¼ cup cold-pressed extra virgin coconut oil, melted
  • ¼ cup rice malt syrup
  • ½ teaspoon gluten free bi-carb soda
  • 1 ½ tablespoons water

 Method

  1. Preheat oven to 150°C and line a baking tray with baking paper.
  2. Combine the almond meal, coconut and nuts in a large mixing bowl.
  3. In a small bowl stir together bicarb soda and water and set aside.
  4. In a small saucepan, add the oil and rice malt syrup and gently stir to melt. Remove from the heat and stir in the bi-carb and water mix. They will react together and foam.
  5. Add the wet mixture to the dry ingredients and stir until well combined.
  6. Roll tablespoons of the mixture into balls and place onto the lined trays. Gently press each ball to flatten slightly.
  7. Bake for 8-10 minutes for softer biscuits and 10-12 minutes for a chewier result.

    I really all your usual posts and recipes, however I find the “Clean ANZAC Busicuits” idea quite all most disrespectful towards those who sacrificed their lives to make Australia and NZ a safe and beautiful place to live. Yes most of us don’t need the sugar and butter used in the traditional recipes I think on this occasion we shouldn’t mess with tradition

    Hello Tameka, we completely agree that on occasion you can’t part with tradition but thought that we would offer a gluten and dairy free alternate to an Australian classic biscuit. We did not intend to disrespect our past and present armed forces.

    Thank you for coming up with a version my son can eat! Before he was diagnosed with Coeliac Disease we made ANZAC biscuits every year but have had to give this up. Now we can get back to our tradition 💜

    Hi, I made these Anzac cookies today and they are amazing! I was able to make 12 out of the mixture. Am I able to view the nutritional information panel anywhere? I am cautious to eat anymore as I don’t know the carb count etc, thanks

    Hello Nala, so glad that you enjoyed them. Here at TNN we do not count calories but if you are interested in the nutritional panel I would recommend popping the ingredients into an app such as My Fitness Pal.
